Culinary Highlights from the Evolve Group Poole Event at White Pepper

Evolve Peer Group’s Summer Social event was hosted by James Private Chef in the heart of Poole, Dorset – and what a tasty evening it was!

Over 30 people joined the fun. It was a brilliant chance for business partners to catch up, chat, and enjoy something special.

The event started at Evolve’s brand-new space at Winchester Place, Poole. Then everyone walked over to the White Pepper Chef Academy on Poole High Street. That’s where the magic began.

Macarons, Knives, and Mouth-Watering Moments

James Palmer-Snellin, Dorset’s talented Head Chef – who’s only 23 years old – wowed the guests. He prepared live canapés right in front of everyone.

They were next-level. Ever tried a savoury mushroom macaron? Now imagine one that melts in your mouth!

Live Cooking and Top Chef Tips from James

James didn’t just impress with flavour. He shared useful kitchen tricks too. For example:

  • Let macarons air-dry before baking. It stops them melting all over your tray.
  • Always use a sharp knife. And learn how to hold it properly – for better safety and neater slicing.

The guests soaked up the tips like sponges. Everyone left feeling inspired (and full).

How Seasonal Foods Can Inspire

How seasonal foods can inspire us will always excite me. I will always remember the afternoon I popped around to my mum’s house. “Oh can I have some raspberries to make something?” I asked. A few handfuls later I started to throw together a tart and a half!

At my childhood home we originally had a raised vegetable bed. Picking the vegetables and eating peas out of the pod are some of my favourite chef memories.
Over the years the veg bed evolved into a bee friendly flower bed with a few raspberry canes at the back. After favourable weather conditions, and a hefty helping of manure in spring, the canes grow to over 7 feet high and were laden with fruit of various sizes.

Blackberries are abundant on hedgerows that have been left to grow. Sadly hedgecutting on farms can start again after the 1st September each year. This often means you have to be quick to pick!

Raspberries come in many varieties and can be small or large. The darker maroon colour shows they are ready to pick. Different varieties fruit at different times of the summer. I personally love to freeze some of the crop to add some sunshine to meals in winter.

Field mushrooms start to grow when the environmental conditions are just right, This used to be a very common mushroom but is becoming harder to find due to loss of habitat and chemical sprays. Organic fields often have them May to September. I have done a foraging course, be aware not all mushrooms are the same. Check them out here.

Useful Fact: When picking a blackberry fruit, the fruit’s central stem (torus) stays with the fruit. With a raspberry, the torus remains on the plant, leaving a hollow core in the raspberry fruit

So where does the idea of canapes come from? The origins of the canapé date back to 18th-century France, where it was initially a small piece of bread or toast with a savoury topping. The word “canapé” translates to “sofa” in French, symbolizing how the toppings rest upon the base, much like a cushion on a couch. Over time, these delicate creations evolved into a modern party staple, perfect for any occasion.

When Do We Serve Canapes?

Traditionally served at events and weddings, canapés entice guests to feel welcomed with a burst of flavour before the main meal. They are typically crafted with a base of bread, puff pastry, or crackers and topped with luxurious ingredients such as smoked salmon, pâté, or goat cheese. How many canapes per guest?

When it comes to quantities, it’s generally considered socially acceptable to serve 3-5 canapés per person before dinner. However, if the event doesn’t include a main meal, you may want to increase the number to 8-10 canapés per person to keep guests satisfied. Some canapés also refresh the palate, especially those with fresh citrus or herb-infused ingredients, offering a delightful contrast to heavier flavours.

Catering to guests with dietary restrictions is essential to ensure everyone has an enjoyable experience. Luckily, there’s a world of options that can satisfy even the most specific needs. Here are some creative and delicious canapé ideas for different diets and allergies:

Dairy-Free: Smoked salmon with dill and lemon on cucumber slices, marinated olives with rosemary and garlic, or spiced roasted chickpeas on a cucumber base 

Egg-Free: Tofu and vegetable spring rolls, marinated artichokes with lemon and herbs, or grilled chicken skewers with a sweet chili dipping sauce

Gluten-Free: Mini quinoa and vegetable patties, smoked salmon with avocado on rice crackers, or shrimp ceviche served in cucumber cups 

Nut-Free: Cucumber and hummus bites, chicken and mango skewers, or a selection of grilled vegetables with a tahini drizzle 

Vegan: Avocado and tomato tartare, roasted beetroot with balsamic glaze and arugula (rocket) on a dairy-free cracker, or mini stuffed mushrooms with vegan cream cheese and herbs

Dorset Food and Drink supports local producers. Dorset is one of the South West’s best natural larders, from local seafood, locally grown meat, cheeses such as Dorset Blue Vinney, The Bees Knees honey, fruit and vegetables.

Sustainable seasonal food has higher nutritional quality, boosting immunity as nature intended. Aiming to avoid pesticides, preservatives or waxes and seeking out organically grown foods. It also has a a positively reduced impact on our carbon footprint.

Choosing Organic Seasonal Ingredients

There are some amazing berry farms in the Isle of Purbeck where you can pick straight off the vine. Allowing you to get them as fresh as possible and freeze on the same day. Buying seasonal ingredients fresh from the farm can give you more varieties and save you money. Farmers selling their produce in Dorset has the additional benefits of lower carbon footprint making them more sustainable.
